The humble artichoke

image To be honest it is not a vegetable that we came across often in the UK. You do see it a lot here in the Vega Baja though. Once it is in season, the market will have plenty of artichoke heads on sale.

The artichoke was one of those vegetables that was grown in large numbers in the kitchen garden (huerta) but is now in decline. However, I understand there are a group of growers and restaurant owners who are trying to bring it back in a bid to revive its fortunes especially in Almoradí.

I have to say, it is not the most appealing vegetable to look at on the plate. We have tried cooking it as per instructions i.e. boiling it once, throwing the water away and then boiling it again and that does work. Then what do you do? We dipped the florets into aioli and then sucked out the soft flesh but that is very messy. You are left with a bowl full of rubbish to throw away.

Does anyone know of a better way to prepare this vegetable? The flavour is good but to be honest, I’d rather have broccoli or spring cabbage at least you can eat all the parts of those vegetables.
